A major stress for many is having to deal with this big heavy screaming hot bird in a pan of boiling fat and juices to feed four or five people. Well, you can relax, here is a solution: Instead of that huge bird, buy a small turket breast and cut it into half inch thick medallions. Dip the medallions in one egg to one cup of milk, and then shake to coat in a bag with one cup of flour, a dash of black pepper, and one crushed-into-powder chicken buillon cube.
Fry in very good oil just until cooked and crispy but still juicy. Pour off the excess oil, but save the pan juices and make your gravy in the pan. Serve with mashed potatoes, stuffing, and cranberry sauce....Alfred-
